Community Courses
Building a healthy community starts with having fun with food. Our community courses will be more than cooking classes. They are a chance for us to learn new foods, meet new friends, laugh over a meal, and share experiences in the kitchen!

A Five Course Meal

HUNT TO TABLE
The key to a happy butcher come hunting season is a properly field-dressed deer and elk. In this class you will learn through live demonstrations:
• Hunter’s Perspective: What to bring and how to properly field dress an animal.
• Butcher’s Perspective: The art of hanging and breaking down an animal.
• Chef’s Perspective: Two new recipes for elk and deer from a local chef.

BEYOND SUMMER SAUSAGE
We all love a good Sumer Sausage. But before you commit a whole buck to the sausage pile, let’s prepare some old and new ways to enjoy the spoils of a good season. In this class you will learn:
• How to make a not just good, but great, meat stick.
• A new take on a Winter classic stew.
• What to do with all that offal.
• Breaking down the leg for multiple meals.

BUTCHER IN THE MIDDLE
From the farm to the table there is always a butcher in the middle. Come meet the guys who harvest and cut the meat in Southern Oregon. Get a bit closer to understanding where you food comes from. Listen to the Meat Science (this is a real thing) And understand how to get access to locally raised meat here in the Valley

SO YOU WANT TO BE A BUTCHER
Butchery is more than a skill, it’s an art. And more than that it’s a great career. In this class we will introduce you to some of the local butchers, explain what the different jobs are within the butcher shop, and discuss the range of industries that need good butchers and meat cutters.

FARMER TO TABLE
More than ever it’s time to get your food from local sources you know. Even we are finding it hard to keep up with the recalls! This class is to introduce you to some your local farmers and ranchers. It’s a panel where you ask the questions. They’ll tell you about the special care they take in growing and raising their products from meat to fruits, and vegetables. It’s a night of education, community and friends.
